South Beach Phase 1 egg muffins
On phase 1 of the South Beach diet I can eat these quiche-like muffins that have no flour in them. I made them up on Saturday and keep them in the fridge, popping one into the microwave for a minute to warm up for breakfast or when I need an afternoon snack. They are less than 100 calories. YUM!
* 1/2 cup Egg Substitute or egg whites
* 2 Eggs
* 10 oz of Frozen Spinach
* 8 oz Cheese, Cheddar, low fat
* 1 green or red pepper, diced
* 2 slices Turkey Bacon, diced
* 1 tsp Hot Sauce
* 1/4 tsp Seasoning (garlic, onion, etc)
Pat frozen spinach with paper towels to soak up some of the excess water. Cook bacon, add peppers and then cool. Mix all ingred together. Spray foil cups and bake 350 for 30 minutes. I like the foil cups b/c I found the muffins stuck to the paper lining a bit.
